New Mansion chef Bruno Davaillon takes over - Dallas Morning News

Tuesday was Bruno Davaillon's first official day as executive chef at the Rosewood Mansion on Turtle Creek, but the Frenchman has been in the saddle for two weeks.

And one of the perks of the job is that he's living at the hotel until his wife and son join him at the end of the year.

Having spent the last five years working for Alain Ducasse, Bruno comes to Dallas with more than enough tensile strength for the gig. Most recently, he was executive chef at Mix, the Ducasse-run restaurant in Las Vegas.

"I think Bruno was attracted to Dallas because he wants to cook for someone more than once," says Mansion managing director Duncan Graham. "In Vegas, why would you eat someplace more than once?"

Strong travel tips

Few people know more about sybaritic vacation getaways than Dallas travel agents Nancy and Jim Strong of Strong Travel Services.

To coincide with the Strongs' recent recognition by Travel & Leisure magazine as Top Ten Super Agents, Jim has released a sumptuous book called Craving for Travel: Celebrating Life's Moments.

Jim travels more than 200 days a year, looking for hidden gems for his high-end Texas clients such as Dallas Museum of Art benefactors Cindy and Howard Rachofsky.

Shook me till bedtime

Sooner or later, all heavy metal rockers retire their chain saws. For example, AC/DC band members were models of rectitude when in town for their Sunday show at American Airlines Center.

For frontman Brian Johnson, who sings "You Shook Me All Night Long," the wildest he got was hanging out Halloween night at the Rattlesnake Bar at the Ritz Carlton with Mötley Crüe singer Vince Neil and Dallas entertainment attorney Gabe Reed. (After doing a solo show in Oklahoma, Vince came to Dallas to visit Gabe and other Dallas friends.)

AC/DC settles down

AC/DC paid a group visit to Villa-O on Travis Street, where they were polite to a fault. They were dressed as one would expect for aging, mellowed rockers – faded jeans, black T-shirts and world-weary faces.

Their drinks? Sodas and filtered water.

The band opted for mostly Italian pastas and wood-fired oven pizzas with only one member ordering the large steak pizzola. After a couple of hours they left in a private car, but not before a couple of fans asked them for their autographs. They obliged.
